1 medium to small size Cauliflower
100 gms. Cranberries
1 medium size Red onion
100 gms. Bacon
1 tpsp. Vinegar
1 tsp. Sugar
Chop only the flower part of the cauliflower into small pieces almost resembling huge bread crumbs.
Chop onions into smalls tiny pieces and sauté.
Dice bacon and fry
Chop cranberries and set aside.
Mix mayo + vinegar and sugar in a bowl. Taste to see if you have a good consistent balance between a sweet , salty and sour flavor. Add all of the ingredients into the dressing and mix well. Cover and leave in refrigerator for a few hours before serving.
