– This recipe is for 4 pieces of salmon fillet
Crumbs ( coating)
1 cup – Bread Crumbs
1/4 cup – Grated Parmesan
1 tsp Salt
1 tsp Pepper
3 Cloves of garlic ( 1 1/2 tsp of garlic powder)
1 Bird eye chilli
Making the crumbs – ( Use hard day or two old bread, season with salt, pepper and grill in over until crisp. Remove from oven and cool down before blending with the rest of the ingredients until its forms a coarse dry mixture)
Coat the salmon and set aside. Lay them on a tray, In the botton of the tray add some white wine and lemon slices. Bake in oven for 10 to 15 min depending an how you like your fish cooked.
Served with Brussel Sprouts ( par boiled and grilled) & Herb potatoes ( salt + pepper + rosemary)
5 tbps – Mayo
2 tsp – Sriracha
Mix up the two and serve.
