1 cup fine oatmeal
2 cups all purpose flour
1 1/2 cup mashed bananas
1 cup brown sugar (I use half cup cause I don’t like my muffins too sweet)
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla power or / vanilla essence
1/2 tsp salt
1/2 cup olive oil or if you prefer – 1/3 cup butter
1 tsp of cinnamon and nutmeg ( optional )
Preheat oven to 375°F
In medium bowl, stir together the following ingredients – flour, oatmeal, sugar, baking powder, baking, soda & salt (cinnamon and nutmeg).
In a separate bowl, mix the mashed bananas, eggs, vanilla and butter. Add the banana mixture to the flour mixture, stirring just until the dry ingredients are moistened.
Butter the muffin moulds and spoon in batter muffin cups. Bake for 15 to 18 minutes. Pierce a toothpick into the center of the muffin and check if it comes out clean. If ready, remove muffins from pan and let cool on wire rack.
Serve with jam or drizzle Nutella on the top on the muffin 🙂
