Prawn & Okra Curry

Ingredients: 

1/2 cup freshly grated coconut

1 tsp cumin

1 tsp coriander seeds

1 tsp peppercorns

2 dried red chillies

1 inch cinnamon stick

3 cloves

4 pods of garlic smashed

1 onion sliced

1 tsp turmeric powder

1/2 inch tamarind ( soak in hot water)

1/2 sliced onion

1 tomato sliced

1 green chili

1 tbsp of vinegar

 

Method: 

Heat a pan and dry fry all the above ingredients except the tamarind until you cam smell the spices.

Put the ingredients in a mixer adding the tamarind pieces + water and grind until a smooth paste. ( Add water as much needed to make it into a think smooth paste)

Heat oil in a vessel and stir fry sliced onion, sliced tomato and one split green chilly.

Add the smooth paste to the pan and stir fry. Add a tsp of salt. Then add a cup of water and the okra. Put in a tablespoon of vinegar this helps take away the stickiness of the okra.

Bring it to a boil and then drop the prawns in. Let it simmer for 3 to 4 minutes and switch off the gas. Close and let the gravy rest for a bit.

Serve with hot steamed rice 🙂
